Smashed Cucumbers--Pai Huanggua
Ingredients:
2 cucumbers
4 cloves garlic, minced
1 Tablespoon sesame oil
2 teaspoons Chinese black vinegar
1/4 teaspoon salt
Preparation:
1. Slice the cucumbers crosswise into two-inch pieces. Using the flat side of a cleaver, whack each piece once or twice so it breaks into smaller pieces.
2. Transfer all the pieces into a bowl and toss them with the garlic, sesame oil, vinegar, and the salt. Marinate them for at least fifteen minutes or up to several hours.
