Papaya with Swallow's Nest

Papaya with Swallow's Nest
Ingredients:
1 Tablespoon dried bird's nest (also called swallow's nest)
1 ripe papaya
1 envelope gelatin
1 tablespoon sugar
Preparation:
1. Soak the nest and remove any tiny feathers or other debris.
Then put it in a pot with two cups of water and simmer for two hours; and then drain well.
2. Cut papaya in half the long way and remove the seeds. Set this aside.
3. Mix gelatine and sugar and 4 ounces of water, add bird’s nest and bring to the boil, then allow to cool. When set, pour onto half of the papaya, cover with the other half and wrap it with plastic food wrap. Freeze for two hours or until hard. Then cut into thick slices and put them out onto a pretty platter and serve.
Approximate nutrient analysis when serving four persons and assuming that the nest nutrients are negligible. Each serving has 39 calories, 10 g carbohydrate, a trace of protein, 3 mg sodium, a trace of total fat and no saturated fat, and no cholesterol.
