Meat and/or Fish paste
Into a meat grinder, put in 1 cup beef, lamb, pork, or fish or a ocmbination of them cut into one-inch pieces. Add one-quarter teaspoon ground black pepper, one-half teaspoon salt, 1 Tablespoon granulated sugar, one Tablespoon vegetable oil, and two Tablespoons flour. Grind this mixture not once but twice, the second time adding one-quarter cup ice water. Then wet your hands and make one-inch balls and either freeze immediately or put them into three cups boiling water, reduce the heat to a simmer, and allow them to simmer for fifteen minutes. At this point they can be frozen for another use or used in a recipe, such as Steamed Doufu and Pork Paste. Keep n mind that one can also substitue any meat, fish, or seafood, or any combination thereof; and one can use them desired.
