Sour Rice, Dong Style
Measure out the needed amount of rice, but do so twenty-four hours before needing to cook it. Wash it and soak it overnight or longer. Line a colander with two layers of cheesecloth, pour in the rice, then before dinner, steam it covered for half an hour. When ready to eat, collect a golf-ball size amount and roll it to a ball. Then use it to soak up any sauce and eat that while using your chopsticks to devour the great Dong main dishes.
