Vegetables and Vegetarian Foods

Vegetarian or Mock Eel
Ingredients:
5 large Chinese mushrooms, soaked until very soft, stems removed and discarded, and minced
3 Tablespoons cornstarch
1 cup vegetable oil
1 Tablespoon chopped fresh ginger
1 Tablespoon dark soy sauce
teaspoon sugar
1 Tablespoon white vinegar
teaspoon ground white pepper
teaspoon five-spice powder
cup vegetarian soup stock
1 Tablespoon white sesame seeds, ground
Preparation:
1. Toss mushrooms with cornstarch, shape like eel pieces, then deep fry until crisp.
2. Remove all but one to two tablespoons of the oil, then stir-fry the ginger for half a minute, then add the rest of the ingredients, mix well and use as is or add to other vegetarian items, as desired.
