6 or more celtuce stems, those freshly harvested are best
1 Tablespoon lard or lamb fat
3 cloves fresh garlic, peeled and slivered
2 shallots, peeled and minced
2 scallions, minced
½ cup any meat or vegetable broth
1. Rinse and peel the celtuce and cut into half-inch pieces.
2. Heat fat in a work or pan, and add the garlic, shallots, and scallions and stir-fry for one minute. Next add the celtuce pieces and the broth and reduce the heat. Simmer for three minutes; then serve with green sauce on the side.
