Pulao and Pumpkin

Pulao and Pumpkin
Ingredients:
1 to 2 cups raw rice steamed until almost done (or use cold rice from a previous day)
1 teaspoon salt, if needed or desired
1 Tablespoon lard or another fat
2 cups dark-meat chicken, lamb, or goat, cubed
1 small daikon or another root vegetable, peeled and shredded
2 onions, peeled and coarsely diced
1 pound piece pumpkin or another gourd, peeled and cut into one-inch cubes
1 lemon, cut into eight pieces, seeds discarded
Preparation:
1. Add salt to the rice, if needed.>br> 2. Heat lard or another oil, and brown the meat on all sides.
3. Add meat to the rice. one cup water or any broth, the root vegetable, onions, and the pumpkin and the lemon pieces. Reduce the heat and simmer covered for one to two hours or until all vegetables are soft.
