Fish Cheeks, Fish Lips, and Fish Maw
Ingredients
up tp two pounds of one or more of these fish parts
2 Tablespoons cornstarch
6 Tablespoons vegetable oil, divided in three parts
Preparation
1. Prepare each item as discussed in one of its recipes.
2. Cut these p arts into one- or two-inch pieces and dust them with the cornstarch.
3. Heat wok, add one-third the oil and fry one-third of the fish parts for two minutes, then drain on paper towels. Fry the second part the same way, then the third part likwise. Drain each on paper towels; then toss them together and serve.
