Sour Pork with Haw

Sour Pork with Haw
Ingredients:
1/2 pound pork loin, cut into one-quarter-inch slices, about two inches wide and long 1/2 teaspoon sugar
1/2 teaspoon salt
1 Tablespoon rice wine
1 teaspoon thin soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon ground white pepper
1/2 cup corn oil
1/4 cup dried haw slices, soaked in half cup warm water
1 scallion, cut in thin slices
2 cloves garlic, minced
1 Tablespoon brown sugar
2 Tablespoons rice vinegar
1 Tablespoon cornstarch mixed with two tablespoons cold water
Preparation:
1. Put pork, sugar, salt, rice wine, soy sauce, sesame oil, and white pepper in bowl and stir well. Allow this to marinate for an hour, then drain and reserve the liquid.
2. Heat corn oil and fry the pork for two minutes, then remove and drain very well.
3. Drain haw slices and dry them gently with paper towels, then mix them with the scallion, garlic, brown sugar, and rice vinegar.
4. Heat a pot or wok and dry fry these ingredients for one minute, before adding the pork and the reserved marinade. As soon as this boils, add the cornstarch and water and stir until thickened, then serve.
