Samsas

Dim Sum and Other Snack Foods

Samsas
Ingredients:
1 pound flour
1/2 cup water
1/2 teaspoon salt
2 pounds lamb, chopped fine
3 large onions, chopped fine
1 egg, beaten
1/4 cup chopped walnuts
1/8 teaspoon ground cloves
2 pieces of parchment paper
Preparation:
1. Mix flour, water and salt and knead for two minutes, then let rest for five minutes. Repeat this process until the dough is smooth, then let it rest covered for half an hour. A little more water may be needed if the dough is crumbly.
2. Mix meat, onions, egg, walnuts, and ground cloves and let this rest until the dough is ready to be rolled out.
3. When it is, roll the dough into a thin sheet and using a glass, cut four inch circles out of the dough. Re-roll any excess dough and repeat until all the dough us used. Cover them until they are ready to be filled.
4. Take a tablespoon of filling and put it in the center of the dough. Wet the edges of the dough with very little water and fold them in half, sealing the edges. Put this half-moon package in your hand and gather the edges together and slightly twist the top so that it looks like a purse. Continue until all dough and filling have been used.
5. Put a piece of parchment paper on each of two steamer trays and fill them with all the samsas, half on each one. Be sure they do not touch each other. Steam twenty minutes, then serve.
