4 large eggs
1/2 teaspoon ground white pepper
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 Tablespoon corn oil
3 green tomatoes, cut into half-inch pieces
2 scallions, sliced thin
1. Break eggs and beat well with salt and peppers.
2. Heat oil and fry tomatoes for two minutes, then add eggs and stir continuously, just until they start to set. Add scallions, and serve.
