Boeja or Tibetan Tea

Boeja or Tibetan Tea
Ingredients:
1/2 cup loose Darjeeling tea (or Chinese fermented brick tea)
10 cups hot water
1/2 cup butter
salt to taste
1 cup heavy cream
Preparation:
1. Put tea in hot water and soak for ten minutes, then boil it (three minutes if using Darjeeling tea, ten minutes for the brick tea).
2. Strain the tea and put it in a blender with all the rest of the ingredients for about three minutes. You will need to do this in three batches if you have a home-sized blender.
Serve in tea cups or small Chinese bowls.
