Ingredients:
1 ounce refined bird's nest
1/2 cup rock sugar
Preparation:
1. Cover the bird's nest with one quart of luke-warm water and let it stand for one to two hours until the nest is fully expanded. Then drain off the water.
2. Place the bird's nest in a covered porcelain bowl and add one quart of water. Steam for one and a half hours.
3. Add rock sugar and steam for another ten minutes. Serve hot or cold, but do not use ice cubes to cool it.
