Fried Rabbit---Bamboo Slip 83
Ingredients:
1 pound rabbit meat, tendons removed and cut into half-inch pieces
1/2 teaspoon salt
1 Tablespoon Chinese rice wine
1 shallot, minced
1 Tablespoon ginger juice
2 egg whites
1 Tablespoon cornstarch
1 teaspoon sesame oil
4 Tablespoon lard or vegetable oil
2 black mushrooms, soaked, stems removed, and cut into triangles
1/2 sweet red pepper, seeded and cut into triangles
1/2 cup chicken broth
2 Tablespoons cornstarch
Preparation:
1. Mix rabbit meat, salt, rice wine shallot, ginger juice, egg whites, cornstarch, and sesame oil. Drain after ten minutes and reserve the liquid.
2. Mix the lard and stir in the rabbit mixture, and keep stirring it for one minute. Then add mushroom and pepper pieces and stir another minute.
3. Mix and heat broth and cornstarch, add to the rabbit mixture, and stir for one minute, then drain and put in a pre-heated bowl, and serve.
