2 cups finely shredded peeled taro root
2 Tablespoons arrowroot or water chestnut flour
1 egg, beaten
3 or 4 sections (about 1 cup) of fresh or frozen durian, cut in half the long way
1/2 cup flour
2 cups vegetable oil
1. Mix shredded taro with flour and egg and stir well.
2. Roll each piece of durian in the taro mixture until completely coated. Then roll into flour, leaving it lightly dusted with the four. Shake off any excess. Squeeze this mixture gently to shape it into pointed rolls.
3. Heat oil and deep fry half the rolls until golden brown, then drain on paper towels and repeat until done.
