Chinese Sweet and Sour Pickles

Chinese Sweet and Sour Pickles
Ingredients:
2 cucumbers
1/2 to 1 teaspooon salt
1 Tablespoon sesame oil
3 to 4 dry red hot peppers
4 tablespoons vinegar
3 Tablespoons sugar
Preparation:
1. Cut cucumbers into two-inch long pieces. Cut each in four pieces the long way and then sprinkle with salt. Let them stand for one hour.
2. Heat sesame oil over medium heat. Add red peppers and stri-fry for a few seconds. Add vinegar and sugar and mix well. Pour marinade over the cucumbers and refrigerate for one to two days before serving.
