Chicken Shark's Fin & Sea Food Restaurant did serve us a fantastic meal. It is in a top-of-the-line hotel and was prepared by Chief Chef Huang Cai Gen and his talented staff. Hosted by Zhang Wen Hii of the Shanghai Food Culture Research Association, we were thrilled to eat in this Jian Gong Jin Jiang Hotel restaurant with Zhao Tong, a television celebrity chef. Our food was a mix of Shanghainese and Cantonese food, one dish better than the next. On the cold plates came quickly, one was frozen tofu, the others fried fish, simmered chicken in red sauce, a plate of goose, duck, tripe, and eggs on sublime silken boiled tofu. The roast goose was in a clear plum sauce accompanying a dozen more delicious dishes including large succulent shrimp, beef with black pepper, fish with roasted garlic, baby pea shoots, immature pigeon, a soup with bamboo pith and chicken, another with goose web, a bird made out of carrot and broccoli, and so many more yummy items. These cold-plate items could have been two meals, not just the beginning of this terrific one. Conversation was as good as the food. We learned that Lion's Head from Yangzhou classically comes with grated apple; it did and it was phenomenal. Historically, the Chinese believe Shandong food best, Yangzhou close on its heels, followed by foods from Guangzhou. Sichuan food, we were told, is for common folk so fine hotels rarely serve it at their better meals. The best Chinese soups, we were told, are free of oil and any salt used goes in during the last five minutes of cooking. Company, conversation, and culinary could not have been better. What an honor to be honored with a meal carefully crafted by this restaurant's master chef, the hotel's general manager, Shanghai's most famous television chef restaurant reviewer, and folks at the Shanghai Food Culture Research Association. Once again, we thank them all for a phenomenal meal among fantastic company.
