1 Tablespoon shao xing wine
1 Tablespoon cornstarch
3 Tablespoons corn oil
1 scallion, minced
2 slices ginger root, minced
1 teaspoon grated orange peel
1 Tablespoon soy sauce
1 Tablespoon shao xing wine or dry sherry
1 teaspoon sugar
1/2 teaspoon salt
1 teaspoon sesame oil

Preparation:
1. Marinate the beef in a ixture of soy sauce, shao xing wine, and cornstarch for half an hour.
2. Heat two tablespoons corn oil and stir-fry the marinated beef just until no longer pink. Remove from the wok and set aside.
