Double Fungi with Celery
Ingredients:
6 stalks celery, their strings removed
1 carrot, peeled and thin sliced the long way
1/4 cup tree ear fungus, soaked in a quart of warm water
1/4 cup silver ear fungus (tremella), soaked in a quart of warm water
1/2 cup corn oil
1/4 teaspoon salt
1/4 teaspoon sugar
1 teaspoon white wine, vodka, or gin
1 teaspoon sesame oil
Preparation:
1. Angle cut the celery into half inch pieces. If the stalks are thick, cut them in half the long way before doing the angle cutting. Do the same with the carrots.
2. Drain the tree ears and pat them dry with paper towels. Tear apart any that are exceptionally large; pieces about one inch will look the best in the finished dish.
3. Heat oil and stir-fry the celery, carrots, and both kinds of fungi for two minutes, then drain well. Put them back into the dried wok or fry pan and add one tablespoon of water. Once it boils, add the salt, sugar, and sesame oil and stir-fry one minute, then serve.
