Haw Fruit with Pork
Ingredients:
1/4 cup dried haw fruit, soaked in two cups of warn mater for an hour or more
1 pound pork loin, cut into thin strips
2 teaspoons sesame oil, one teaspoon each to be used separately
1 teaspoon minced fresh ginger
1 scallion, minced fine
1/2 teaspoon ground Sichuan pepper or five spice powder
1/2 teaspoon sugar
1 Tablespoon rice wine
1 Tablespoon corn oil
Preparation:
1. Put haw fruit in four cups boiling water and bring to the boil, reduce heat then simmer for fifteen minutes. Allow to cool, then strain and discard any seeds, and set fruit aside.
2. Bring the above liquid to the boil and put the pork strips in it and cook them for one minute, then drain and set aside for about fifteen minutes to cool.
3. Mix one teaspoon sesame oil and all of the ginger, scallion, rice wine, and Sichuan pepper. Add the partially cooled pork strips and marinate them for one hour. Drain reserving any solids, but separating the pork and the other ingredients as best as possible.
4. Heat corn oil and fry the drained haw fruit for one minute. Add marinated pork and fry an additional minute then add the remaining solids and the other half of the sesame oil.
