XO Sauced Cucumber and Bitter Melon

XO Sauced Cucumber and Bitter Melon
Ingredients:
1 bitter melon, seeded, white membrane removed, cut in fourths the long way, then cut into two-inch lengths about half-inch wide
1 cucumber, cut in quarters and cut to match bitter melon
1/2 carrot, peeled and slivered
1 clove garlic, minced
1/2 teaspoon salt
1 dried red chili, seeded, and crushed
2 Tablespoons XO sauce
1/2 Tablespoon corn oil
2 slices fresh ginger, slivered
1 Tablespoon sugar
1 Tablespoon sesame oil
1 teaspoon mushroom soy sauce
Preparation:
1. Soak bitter melon in ice water for half an hour, then blanch it for two minutes, and drain.
2. Mix bitter melon, cucumber, carrot, garlic, salt, chili pepper pieces, and XO sauce and set aside for thirty minutes, then drain any liquid and discard.
3. Heat corn oil and fry ginger for half minute. Add vegetable mixture and stir-fry until cucumber and bitter melon are wilted and soft. Add sugar, sesame oil, and mushroom soy, fry another minute, and serve.
