Suyani's Vegetarian Chicken II
Ingredients:
1 pound gluten sticks (mien jing), roll cut into bite-sized pieces
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1 cup finely chopped onions
10 dried chili peppers
1 staranise
1 piece stick cinnamon, about 3 inches long
1 can unsweetened coconut milk
1 cup tomato catsup
2 fresh tomatoes, cut into wedges
1 cup frozen peas
salt to taste
3 Tablespoons vegetable oil
Preparation:
1. Mix the gluten pieces with the turmeric and salt and set aside for half an hour.
2. Heat oil, then brown onions and ginger for a minute. Add the chili peppers and star anise and stir for a minute longer, then add the gluten pieces and mix well.
3. Add coconut milk and bring to the boil along with the cinnamon stick, catsup, and sugar. Stir while simmering for one or two minutes.
4. Add tomato wedges and oeas and cook another minute or tow. Then add salt to taste and serve with hot rice.
