Bean-paste Stuffed Loquats |

Ingredients:
20 canned loquats, drained well
1/2 cup red bean paste
2 Tablespoons sugar
25 whole almonds, blanched their peels discarded, five of them coarsely chopped
Preparation:
1. Stuff loquats with red bean paste and insert one whole almond down into each one of them.
2. Dip stuffed loquat end into the chopped almonds and put them in a steamer basket.
3. Steam covered over boiling water for eight minutes. Remove to a bowl, and serve.
