1 whole chicken, about two and a half pounds
1/2 teaspoon ginger
1/2 teaspoon chopped scallion pieces
1 Tablespoon peanut oil
1 teaspoon salt
1 teaspoon soy sauce
1. Clean the chicken and simmer it in boiling water for fifteen minutes. Take it out and put it into ice water for one minute, remove, and dry the chicken, then cut it into in small pieces. Put these on a clean plate reshaping them so they look like the original chicken.
2. In a small bowl, make a sauce with the ginger and scallion mixed with the peanut oil, salt and soy sauce.
3. Serve the chicken with the sauce.
