Chicken with Garlic and Chili
Ingredients:
1 whole chicken
1 Tablespoon vegetable oil
2 Tablespoons chili paste with garlic
1 dried chili, seeded and minced1 scallion, slivered
1 teaspoon fresh ginger, minced
2 Tablespoons fresh garlic, peeled and smashed
3 Tablespoons thin soy sauce
1 Tablespoon sugar
2 Tablespoons Chinese rice wine
1 Tablespoon chicken bouillon powder
1 Tablespoon sesame oil
Preparation:
1. Bring four cups of water to the boil, add the chicken, cover the pot and simmer for twenty minutes. Remove and allow the chicken to cool for twenty minutes.
2. Chop the chicken, bones and all, into bite-sized pieces and put these on a serving platter.
3. Heat a wok, add the oil, then the chili paste, chili, ginger, garlic, soy sauce, sugar, rice wine, and the bouillon powder, and stir for one minute, add the sesame oil and then pour this mixture over the chicken.
