Pan-fried Lotus Cake
Ingredients:
1 pound fatty pork
1 Chinese pork sausage, chopped coarsely
1 Chinese liver sausage, chopped coarsely
3 large Chinese black mushrooms, chopped coarsely
1/2 pound lotus root, peeled and chopped coarsely
3 to 6 sprigs fresh coriander, minced
1/2 Tablespoon oyster sauce
1/2 Tablespoon hoisin sauce
1/2 teaspoon sugar
1/2 teaspoon coarse salt
1 Tablespoon cornstarch
3 Tablespoons vegetable oil
dipping sauce of your choice (optional)
Preparation:
1. Mix pork, sausages, mushrooms, lotus root, coriander, oyster and hoisin sauces, sugar, salt, and cornstarch, stirring on one direction, and only until all ingredients are well combined. Over stirring can make the final product tough.
2. Make ten hamburger-shaped patties of this mixture and set aside for half an hour.
3. Heat wok or fry pan, add the oil, and brown half the patties on one side, turn them over and brown on the other side, Remove and keep warm and fry the second batch of these cakes.
Note: They are good with a dipping sauce such as plum sauce, and even served plain.
