Mutton Skewers

Mutton Skewers
Ingredients
1 and 1/2 pounds mutton shoulder, cut into one-inch cubes
1 teaspoon coarse salt
1 teaspoon sugar
1 Tablespoon Shaoxing wine
1 Tablespoon Chinese black vinegar
1/2 teaspoon ground black pepper
1 egg, beaten until light yellow
2 Tablespoons flour
1 teaspoon minced fresh red chili pepper
2 Tablespoons whole cumin
2 teaspoons minced shallots
1 teaspoon sesame seeds
10 wooden skewers soaked in water for half an hour
Preparation:
1. Mix mutton with salt, sugar, vinegar, wine, and the black pepper, and set aside for twenty minutes.
2. Mix the egg, and the four and toss with the meat cubes, then put them on the skewers.
3. Mix chili pepper pieces with the cumin, shallots, and sesame seeds and coat the skewered meat thoroughly.
4. Broil or cook over an open fire ten minutes turning every two or three minutes. Then serve.
