Hakka Steamed Bread
Ingredients:
1/2 cup peanuts or walnuts
1 Tablespoon vegetable oil
2 cups flour
2 scallions, minced
1 egg, beaten
1 salted duck egg, smashed
1 Tablespoon baking powder
Preparation:
1. Crush nuts with the flat side of the cleaver.
2. Heat wok or fry pan, add oil, then the nuts, and stir-fry for one minute, Remove to a paper towel, and let cool, stirring occasionally.
3. Mix flour, scallions, beaten egg , salted duck egg, and baking powder, and mix or knead until smooth. Divide dough into eight pieces, roll each slightly in the peanuts, then place on a four-inch square of parchment paper, piece of a banana or a lotus leaf and put in a steamer. Steam for eighteen minutes. Remove and serve.
