Oysters in Citrus Honey
Ingredients:
10 large oysters
1 Tablespoon Worcestershire sauce
1 Tablespoon fish sauce
1 Tablespoon ginger juice
2 Tablespoons Shaoxing wine
1 Tablespoon minced onion
1/4 teaspoon ground white pepper
2 Tablespoons vegetable oil
3 Tablespoons honey
1 Tablespoon orange or tangerine juice
1 sprig fresh coriander cut into one-inch lengths
Preparation:
1. Soak oysters in tepid water for one hour, then rinse and remove any sand.
2. Mix Worcestershire and fish sauces, stir in ginger juice, wine, minced onion and ground white pepper, and marinate the oysters for half an hour, then drain and set liquid aside.
3. Heat oil and fry oysters on low heat for one minute, then add honey and citrus juice, increase heat and when sauce bubbles stir and fry them for one to two more minutes, stirring all the time. Transfer to a heated serving latter, then serve topping each oyster with a piece of coriander.
