Rice, Noodles, and Other Grain Foods

Noodle Salad, Sichuan Style
1/4 pound thin rice noodles, cooked as package directs, then drain and cool
2 cups chicken, cooked and shredded
1 cup finely shredded cabbage
1 cup grated carrots
1 medium sweet pepper, finely chopped
1/2 cup finely chopped scallions
1/4 cup sesame oil
2 Tablespoons soy sauce
2 Tablespoons honey
1 Tablespoon vinegar
2 Tablespoons grated fresh ginger
1 teaspoon chilli flakes
4 Tablespoons toasted peanuts
1. Place noodles, chicken, cabbage, carrots, sweet pepper and scallions in a large salad bowl and set aside.
2. In a large bowl, combine remaining ingredients, except peanuts and make this into a salad dressing.
3. Stir in the noodle mixture, sprinkle with peanuts, then serve.
