Zhajiang Noodles

Dim Sum and Other Snack Foods

Zhajiang Noodles
Ingredients:
4 Tablespoons sesame oil
4 cloves garlic, crushed
1/2 pound ground pork
3 Tablespoons soy sauce
2 Tablespoons hoisin sauce
1/2 teaspoon chilli flakes
1/2 teaspoon salt
1/2 pound firm tofu, cut intl half-inch cubes
1 cup finely chopped scallions
1 cup finely chopped peeled cucumber
1 pound wheat noodles, cooked according to package instructions, then placed on a pre-heated platter
Preparation:
1. Heat wok or fry-pan, add oil and garlic and stir-fry using medium/high heat for half a minute.
2. Add pork and stir-fry for five minutes then add soy sauce, hoisin sauce, chili pepper flakes, and the salt and stir-fry for two minutes.
3. Stir in tofu and one-third cup of water, reduce the heat to low and cover the pan and simmer for five minutes.
4. Stir in onions and cucumber stir-fry for half a minute; mix well, then pour over warm noodles and serve.
