Henan Style Sweet Potatoes

Henan Style Sweet Potatoes
2 pounds sweet potatoes, peeled and cut into two-inch chunks
2 garlic cloves, peeled and mashed
2 Tablespoons Chinese red vinegar
1 cup crushed Chinese brown slab sugar
1/2 cup superfine or bar sugar
1/2 cup rose or chrysanthemum petals
1. Put sweet potatoes in a sauce pan with the garlic and the vinegar, and bring to the boil. Immediately reduce the heat, and simmer this for twenty minutes.
2. In another pan, put both sugars and three tablespoons cold water. Bring to the boil, stirring constantly, until the sugars melt and come to the boil.
3. Drain the sweet potatoes and mash them before adding the sugar solution. Then put them n a pre-heated serving dish. Mix half the flower petals into the potatoes and scatter the rest of the flower petals over them, then serve.
