Beef Ribs with Bamboo Shoots
Ingredients:
2 pounds beef ribs cut into one-inch by one-inch pieces
1 Tablespoon orange juice
1 teaspoon chicken bouillon powder
1 egg white
1 Tablespoon sugar
1/2 teaspoon salt
1 Tablespoon Chinese white vinegar
2 Tablespoons sesame oil
1 cup bamboo shoots, cut into thin strips
1 Tablespoons cornstarch mixed with two tablespoons cold water
1 teaspoon granulated sugar
1/2 teaspoon ground cardamon
Preparation:
1. Marinate beef rib with a mixture of orange juice, bouillon powder, egg white, salt and sugar. Cover and put this in the refrigerator for three hours or overnight.
2. Add sesame oil and the bamboo shoots, and mix well before putting them into a heat-proof bowl and steaming them over boiling water for ninety minutes or boiling then in one cup of stock and one cup of water for one hour.
3. But ribs into a serving bowl and the liquid remaining from their steaming into a small pot. Add cornstarch mixture, sugar, and the cardamon and bring to the boil. Reduce heat and stir about two minutes or until thick, then pour over the ribs and serve.
