1 zucchini or 1 carrot, shredded; or one-half of each
1 Tablespoon vegetable oil
4 eggs, beaten
1 teaspoon salt or 1 Tablespoon thin soy sauce
1. Put shredded vegetable(s) and the oil in a wok or fry pan, and stir-fry until they are soft.
2. Add salt to the beaten eggs, then add them to the wok or fry pan and stir-fry until the eggs begin to set. Fry them fry until golden, and serve.
