Fried Shallots II
1 pound or more shallots
2 cups vegetable oil
1.Cut both ends off each shallot and discard them, then cut each one in half top to bottom, and remove the paper or outer peel.
2. Heat one to two cups of vegetable or peanut oil over medium heat. Before it begins to smoke, turn the heat to low, add the shallot halves and stir continuously until they are golden brown, about ten to fifteen minutes. Be careful not to burn them.
3. Use a slotted spoon and remove them to a plate lined with several layers of paper towels, and allow them to cool. Refrigerate them in a glass jar. b>Note: Strain the oil and refrigerate it for another use; and use the shallots and the oil, as needed.
