Stuffed Bitter Melon Soup
Ingredients:
1 prepared pork, bitter melon, and black bean recipe
5 dried Chinese black mushrooms, soaked, stems removed and discarded, then cut into quarters
10 shrimp, peeled, veins removed and discarded, and cut in half the long way
1 piece spiced bean curd, cut in half, then cut into thin strips
1 quart chicken broth
Preparation:
1. Prepare the recipe for Bitter Melon, Pork, and Black Beans but do not use the cornstarch thickened sauce on the stuffed slices. Instead put one stuffed slice on the bottom of each bowl for each diner.
2. Mix the thickened sauce from the recipe above with the quart of chicken stock and bring it to the boil, stirring often.
3. Using a large spoon, pour the heated liquid into each bow deflecting it so it does not move the meat mixture from the bitter melon on the bottom of each soup bowl, then serve.
