Bitter Melon, Bean Curd, and Fish
Ingredients:
2 Tablespoons vegetable oil
3 garlic cloves, peeled and sliced thin
1 small onion, peeled, cut in half, and thin sliced
1 piece of fresh ginger, peeled and minced
1 pound firm doufu
3 bitter melons, peeled, seeds removed, and cut into thick slices
1 pound of carp or tilapia, cut into two-inch pieces
1/2 cup chicken broth
1 teaspoon thin soy sauce
1 teaspoon sesame oil
Preparation:
1. Heat a wok or fry pan, add the oil, and fry the onion and garlic until they turn brown and are very aromatic, the add the fresh ginger and stir-fry this for one minute.
2. Next, add doufu and brown that it one side.
3. Now, add the bitter melon on top of the doufu and the fish on top of that.
4. Mix the broth, soy sauce, and sesame oil, and pour this over the fish, then cover the wok or fry pan, and simmer for three minutes. Serve.
