Duck Feet with Red Wine Lees
1 pound duck feet, bones removed and discarded
4 Tablespoons Kaoling
1 Tablespoon red wine lees
1 hothouse cucumber, cut into thin sticks
1 chili pepper, seeded and shredded
2 Tablespoons ginger, soaked in white vinegar for ten minutes, drained, the vinegar discarded
1 teaspoon or I large fresh peeled garlic
2 teaspoons coarse salt
1 teaspoon granulated sugar
1 teaspoon Chinese rice wine or lemon juice
1. Mix duck feet, Kaoling, and wine lees and allow this to marinate for half an hour.
2. Steam the duck feet in a heat-proof dish over boiling water for twenty minutes, then remove them from the dish and drain. Allow them to cool before serving.
