Minced Meat Pies

Dim Sum and Other Snack Foods

Minced Meat Pies
Ingredients:
1/4 pound finely minced or ground fatty pork
1/4 cup minced chives or scallions, the green part only
2 Tablespoons minced fresh coriander
2 Tablespoons coarsely minced pine nuts or another nut
2 Tablespoons Shao Xing wine
1 Tablespoon mushroom soy sauce
1/4 teaspoon hot pepper sauce
2 teaspoons ground white pepper
2 teaspoons sesame oil
20 round wonton skins
2 cups oil for deep frying
hot sauce for dipping mixed half and half with regular soy sauce
Preparation:
1. To make the filling, gently mix all of the above ingredients except the wonton skins and the oil.
2. Put one scant tablespoon of the meat filling in the center of one wonton skin, wet half the edge, and close it pleating the skin pressing down to seal it. Then make this into a ball by gently pressing the seal into its middle and being careful no to split the wonton skin.
3. Heat oil in a wok or a large fry pan to medium heat. Add half the meat pies and fry them on one side, then turn them over and fry them on their other side, about three minutes on the first side, two on the second side. Then remove them to paper towels to drain while you fry the second batch.
4. Put the meat pies on a pre-heated platter, the sauce in a small serving bowl, and serve.
