Wet and Dry Green and Black
Ingredients:
1/4 cup dry tree ear fungi, soaked for half an hour
2 tablespoons rice vinegar
½ teaspoon coarse salt
1 teaspoon sesame seed oil
1 cucumber, chopped coarsely
2 Tablespoons coarsely minced fresh ginger
Preparation:
1. Heat the vinegar with one tablespoon water, and stir in the salt until dissolved, then add the soaked tree fungi. Then remove from the heat.
2. When removed from the heat, add the cucumber and the minced ginger. Let cool for half an hour, then serve or serve later at room temperature.
