½ cup lard or another fat
2 pounds potatoes, peeled if desired, and sliced thinly
1 cup mint leaves or 3 Tablespoons green sauce
1 to 2 teaspoon coarse salt
dash of or up to 1/4 teaspoon Sichuan peppercorns, crushed coarsely
1. Heat wok or a fry pan, add the lard or other fat, then the potato slices, and stir-fry until they begin to brown, then stir them another two minutes.
2. Add mint, salt, and Sichuan peppercorns, and stir one more minute, then serve.
