Chicken with Banana and Chili
Ingredients:
½ pound chicken breasts
½ teaspoon sugar
½ teaspoon salt
1 teaspoon cornstarch
1 Tablespoon vegetable oil or chili oil
1 green pepper, diced
1 red piquant chili pepper, seeded and diced
2 shallots, peeled and diced
1 Tablespoon yellow bean paste, mashed with an equal amount of cold water
1 almost ripe banana or plantain, cubed
Preparation:
1. Dice the chicken and marinate for half an hour with the sugar, salt, cornstarch, and two tablespoons cold water. Stir well and discard any extra liquid.
2. Heat the wok, add the oil and stir-fry the chicken cubes, then add the green pepper and shallots and stir-fry for two minutes.
3. Mash the bean paste and stir-fry it for one minute before adding the chili paste and banana pieces. Serve hot or warm, as desired.
