Pork balls on Banana Leaves
Ingredients:
1 pound pork, minced coarsely
3 ounces preserved vegetables, finely minced
½ cup napa cabbage, finely minced
3 small chilies, seeded and finely minced
½ pound soft doufu, mashed
1 Tablespoon dark soy sauce
2 shallots, peeled and finely minced
1-inch piece fresh ginger, peeled and minced
1 teaspoon salt
1 teaspoon freshly ground back pepper
1 banana leaf, cut into two-inch squares
Preparation:
1. Carefully mix all the ingredients except the pieces of banana leaf.
2. Make one-inch balls of the meat mixture.
3. Put these balls, one each, on a piece of banana leaf and lightly press them down.
4. Put them over boiling water in a steamer and steam them for twenty minutes, then serve on a pre-heated platter.
