Ginger-Pickled Walnuts


Ginger-Pickled Walnuts
1 cup granulated sugar
1 cup walnuts, each one cut into halves or quarters
1 large piece fresh ginger, cut into thin strips
1. Stir sugar and two cups of water and simmer until sugar is melted, then raise heat to high until it boils. After one minute. reduce it to low, and add the ginger pieces. Leave this simmer for five minutes, the remove the pot from the heat and let it stand uncovered for half an hour.
2. In a separate pot. Bring two other cups of water to the boil, add the walnuts and let them soak for half an hour then drain them and mix them with the liquid in the other pot. Let both pots rest for an hour, then drain and sprinkle the walnuts on whatever they are being used for, such as the spareribs.
3. Store the remaining syrup covered in the refrigerator. It can be reused two or three more times, always bringing it to the boil first, then adding the newly prepared walnuts.
