Cold Bean Soup, common for the Cold Food Festival
1 pound green mung beans, simmered for forty minutes
3 Tablespoons tapioca flour
½ cup granulated sugar
½ cup cream
1/4 cup coconut milk
10 goji berries, cooked for five minutes
1. Mash the mung beans or put them into a blender with the cream, coconut milk, and the sugar. Then cool this mixture to room temperature in individual small serving bowls.
2. Add one goji berry on top. One cn provide extgra cream or coconut milk, is desired; then each person can some from small pitchers on the side pouring it into their own bowls.
