Moon Cakes for the Moon Festival
Ingredients:
Special wooden (or plastic) molds, dusted with 1 Tablespoon flour before each use, excess knocked out (never grease these molds)
Ingredients for 10 exterior and 10 top skins to me mixed and gently rolled out
1 cup of wheat flour
1/2 half cup of golden syrup
1 teaspoon alkaline water
2 Tablespoons vegetable oil gently mixed and gently rolled out
Fillings:
They can be lotus seed, sweet bean, jujube, or a five seed paste
10 small cooked duck or quail eggs, 1 for each center
Preparation
1. Roll dough and line a mold, fill it with a selected filling pushing an egg in its center, if desired, then we and seal a piece of dough to seal the top to the bottom skins, and knock it out, re dust the mold and refill it and repeat until all materials are used.
2. Once filled and sealed, brush the top with equal parts of egg and water, and bake for an hour at 325 degrees F, then cool, cut into small wedges, and serve.
