Shrimp and Longan Soup |

Ingredients:
½ pound fresh shrimp, peels and veins discarded
½ cup longan wine
20 goji berries
30 dried longan
½ slivered hot pepper, their seeds discarded
1 Tablespoon light soy sauce
5 cups chicken stock
1 scallion, finely cut on an angle
Preparation:
1. Soak the peeled shrimp in the wine for half an hour
with the goji berries and dried longans. Then put all of
this in a pot with five cups chicken stock and the hot
pepper slivers.
2. Bring it to just below the boil and simmer for twenty
minutes, then add the scallion pieces for five minutes
and serve hot or tepid.
