Unusual Ingredients

Snails in Hot Sauce
Ingredients:
1 pound frozen snails without their shells
1 Tablespoon coarse salt
2 Tablespoons vegetable oil
3 shallots, peeled and minced
1 Tablespoon finely minced fresh ginger
2 cloves peeled fresh garlic, finely minced
1 red chili pepper, seeded and finely minced
1 teaspoon ground white pepper
2 teaspoons chili paste
2 teaspoons granulated sugar
2 teaspoons fish sauce
½ cup Chinese rice wine
1 Tablespoon minced green scallion tops

Preparation:
1. Put snails in three cups of water with the salt, bring to the boil and blanch for a minute, then put them in cold water and drain. If in their shells, remove and freeze them for another use.
2. Heat a wok, add the oil, then the shallots, ginger, garlic, and chili pepper pieces and stir-fry for two minutes.
3. Next add the ground pepper, bean sauce, and the wine, and stir -fry another two minutes. Add the snails then everything else and stir fry two more minutes then put everything a pre-heated platter. Garnish with the green scallion pieces, and serve.
