Shark Fin Cakes
1 pound shark fin meat, minced very fine
½ pound ground pork, minced fine
2 stalks celery, minced fine
3 scallions, minced fine
3 Tablespoons Chinese rice wine
dash each, salt and ground white pepper
2 Tablespoons cornstarch
2 Tablespoons thin soy sauce
1 teaspoon granulated sugar
3 Tablespoons vegetable oil
½ pound pea shoots, strings remove, each cut in half on an angle

1. Mix minced shark fin meat and pork, add minced celery and scallions, the rice wine, salt and pepper, cornstarch, soy sauce, and the sugar, and take one- tenth of this mixture and make a flat patty and set this aside, then repeat until all are made into flat patties.
2. Heat a wok or fry pan, add the oil, and when it is hot, add half the patties and fry until light brown, then remove to paper towels to drain and repeat with the rest of the patties. Put pea shoots into the wok or fry pan and fry them for two minutes, then remove and drain them and put them in the center of a serving platter. Use the pea shoots all around them, then serve..
