Spirited Haw Syrup
Ingredients:
1/4 cup fresh or dried haw fruit soaked overnight in two cups of warm water, then drained and dried gently with paper towels
2 tablespoons mao tai or another white distilled alcoholic beverage
1/4 cup Chinese brown sugar
Preparation:
1. Roast the fruit on metal skewers over a gas flame. Turn them often until they just begin to char. Then remove from the heat source and allow them to cool for an hour.
2. Mix fruit and alcohol and add half cup of cool water, and bring to the boil, then simmer over low heat for fifteen minutes.
Remove the fruit and add the brown sugar stirring until it is completely dissolved. Drink warm or hot, or set side and use in long-cooked stew-like dishes.
